Potato Latkes

This is my favorite holiday food – no doubt about it, nothing even comes close. With a smooth interior, a crispy exterior, and a taste of onion, these potato latkes are best served very hot, straight from the oven. In all the latke recipes I have seen, no one describes the blender technique I use to make these holiday favorites. It is unusual, but it works; trust me on this one. No matter what else I serve, these are the stars of the menu.
Applesauce I

Food Editor's note: This is one of those simple recipes that you can't mess up and that everyone loves. My friend Babs has made this for numerous Chanukah parties at my home and no matter how much she makes, it's always gone! She uses Macintosh apples, but you can try different varieties. The whole cinnamon sticks and the maple syrup add the extra flavor that make this applesauce taste special and home-made.
Sweet Potato Latkes

Food Editor's note:  If you are open to a latke variation, you will find this to be a really delicious side dish that can be made year-round.  Eric says "if you have not tried Sweet Potato Pancakes you are really missing another [Chanukah] treat."  I would agree, as would two of my son's friends and one father who were passing through as the latkes were coming out of the pan and became my taste-testers.  They voted a definite thumbs-up! 
Cauliflower Latkes (Low Carb!)

I'd seen recipes for cauliflower latkes and, since I really like cauliflower, I thought I'd give these a try.  I was pleasantly surprised at not only the great taste of the latkes, but at how similar they look to the real thing.  These are very low in carbohydrates and are much healthier than regular potato latkes.  You can eat these year-round without guilt!
Brandied Chanukah Apple "Doughnuts"

The apples make this fried treat special, as does the brandy, which adds "adult" flavor but is not overwhelming at all. These are not too sweet (which is good), but you can sprinkle them with as much powdered sugar as you like when serving, or have each person "dust" their own. Serve these apple doughnuts hot, while they're still crispy and fresh - it's worth the last-minute frying, which only takes a few minutes anyway.
Lemon Anise Olive Oil Cookies

This is a wonderful cookie for Chanukah or year round – note that it contains olive oil, a symbol of Chanukah, plus a healthier alternative to butter, margarine, and other oils. These cookies are not too sweet and have an enticing, "adult" flavor. They are perfect for a simple dessert, or for tea or a hostess gift.
